Get In The Spirit This Season With Five Festive Recipes

'Tis the season for coming together with friends, family, loved ones and most of all, delicious food. If you're looking for an easy and delicious dish to take to your next Christmas/Festive season get together, look no further. Below we share our five favourite festive dishes for the season.

Reindeer Cookies

Makes 8 serves.

INGREDIENTS:
  • 115g Dark Chocolate
  • 55g Butter (Unsalted)
  • 1 Egg
  • 100g Brown Sugar
  • 120g Plain Flour
  • 10g Cocoa Powder
  • 16x Pretzels
  • 8x Red Smarties
  • 8x Candy Eyeballs
  • Baking Powder, ½ tsp
    DIRECTIONS:

    1. Preheat oven to 180°C and line a baking sheet with parchment paper.

    2. To a microwave safe bowl add 105g of dark chocolate and butter. Microwave at 30 second intervals and mix until melted. Set aside.

    3. To a second bowl add brown sugar, egg and a pinch of salt. Beat with an electric egg mixer for 3-4 minutes on high speed until light and fluffy.

    4. Gently fold through melted chocolate.

    5. Sift through flour, cocoa and baking powder to mixture. Mix with whisk until combined.

    6. Scoop mixture onto baking tray and bake for 12-14 min. Let cool for 20 minutes.

    7. Melt remaining dark chocolate. Gently dip one half of pretzel in dark chocolate and stick to cookie to create two ears. Repeat this process for eyes and nose.

      *Cookies can be stored in an air-tight container and kept for 3-4 days.

      Prawn & Cucumber Bites

      Makes 4 serves.

      INGREDIENTS:
      • 150g Cucumber
      • 150g Prawns (Raw)
      • 200g Avocado
      • 3g Olive Oil
      • Chilli Flakes, 1tsp
      • Lime Juice, 2tsp
      • Coriander, to taste
      • Cayenne Pepper, ½ tsp
        DIRECTIONS:

        1. Slice cucumbers horizontally.

        2. In a bowl combine prawns, olive oil, cayenne pepper and half of lime juice.

        3. Heat a pan over medium heat and add prawns. Cook for 1-2 minutes each side. 

        4. In a small bowl add avocado, chilli flakes and remaining lime juice. Mix to combine well.

        5. Top each cucumber slice with avocado and prawn.

          *This meal can be stored in an airtight container and kept in the fridge for 2-3 days.

          Christmas Couscous

          Makes 8 serves.

          INGREDIENTS:
          • 300g Pearl Couscous (Raw)
          • 150g Green Peas (Frozen)
          • 250g Cherry Tomatoes
          • 10g Olive Oil
          • 1x Red Onion
          • Fresh Parsley, ¼ cup
          • Lemon Juice, 1 tbsp
            DIRECTIONS:

            1. Prepare vegetables: thaw peas, finely dice red onion and cut tomatoes in half. 

            2. Cook couscous as per packet instructions. 

            3. In a large bowl combine couscous, peas, tomatoes, onion and parsley. Drizzle olive oil, lemon and season to taste with salt and pepper. Gently toss to combine.

            *This meal can be stored in an airtight container and kept in the fridge for 3-4 days.

            Rocky Road

            Makes 14 serves.

            INGREDIENTS:
            • 500g Milk Chocolate
            • 150g Marshmallows
            • 60g Peanuts
            • 150g Raspberry Lollies
              DIRECTIONS:

              1. Line a slice tray with parchment paper. 

              2. Prepare ingredients: roughly chop marshmallows, peanuts and lollies.

              3. Place chocolate in a small microwave safe bowl and microwave on high for 10-20 seconds. Stir chocolate and return to microwave for 10 second bursts if required, stirring until melted. 

              4. Place marshmallows, peanuts and lollies into bowl with melted chocolate and mix to evenly combine.

              5. Transfer rocky road mixture into slice tray and press firmly with a spatula.

              6. Place in fridge for 1 hour or until set, then cut. 

                *Rocky road can be stored in an airtight container and kept in the fridge for 3-4 days.

                Spinach & Ricotta Parcels

                Makes 8 parcels.

                INGREDIENTS:
                • 2x Puff Pastry Sheet
                • 50g Spinach
                • 500g Ricotta
                • 1 Egg
                • Nutmeg, 1tsp
                  DIRECTIONS:

                  1. Preheat oven to 180°C and line a baking sheet with parchment paper.

                  2. In a bowl combine ricotta, nutmeg and spinach. Season to taste with salt and pepper.

                  3. Cut puff pastry into quarters.

                  4. Crack egg in bowl and whisk.

                  5. Slice puff pastry into quarters. Add one tablespoon of mixture to centre of pastry. Brush corner with egg wash and fold edges up to form a pouch.

                  6. Add parcels on baking sheet and brush with remaining egg wash. Cook in oven for 20-25 minutes, until golden brown.

                    *This meal can be stored in an airtight container and kept in the fridge for 3-4 days.
